These olives are heading the mill so the #juice of the #olives is extracted with #care and #passion. You know what I mean, right? Olives must be processed before 24 hours of harvesting otherwise they can suffer begin a fermentation and as you’ll understand, it’s not great at all … so these guys work almost 24/7 when the harvest is on. Isn’t is lovely !!!

And this is the Pepper and Tomato pastry … absolutely delicious. The original has nothing else. This one has ham and there is another version with Tuna … You’ll get crazy about it. Apparently it came from Italy at the time the Kingdom of Aragon was also in some parts of the South of Italy. This one was cooked by Enrique from Puig Moreno bakery. Exquisite !!!

These are 4 different varieties of truffles. Definitely the ones that are more valuable and appreciated. Anyone knew truffles were more than one thing??

In futures post I’ll try to explain the difference, but definitely all have different fragrance, different flavor and are grown in different times along the year !!!
